SHAPE: cylinder-shaped, sharped at the ends, of firm consistency but not elastic.

MEAT:obtained from sirloin tip centerof bovine meat.

AROMA:spicy.

FLAVOR: delicate but aromatic, in line with Norcia tradition.

SLICE: uniformred.

AGING:atleast3 months.

FEATURES: unlike cured meats, bresaola is very low in calories due to the fact that it is produced only from fat-free cuts of beef, so it is particularly suited for use in weight-loss diets. Bresaola can be served for aperitifs and starters with cheese, nuts and rucola, otherwise as carpaccio with lemon juice and rucola. Furthermore, bresaola is ideal  to fill sandwiches and focaccia, or can be used as pizza topping.
